Monday Meal 3: Healthy chicken curry with quinoa

Every Monday you will see a healthy meal placed on my blog. These meals are all easy to make and don’t take up much time. They will be loaded with nutritious foods that will supply your body with vitamin, minerals, proteins and slow release carbohydrates. If you gain inspiration from these meals you will start to add different foods into your diet. Making you healthy and ready to workout and feel great about life.

This week’s Monday meal is a chicken curry with quinoa added into the sauce. So that all the carbs, protein and veg are all in the same pot. It has a great texture and means you don’t have to worry about washing up lots of pots and pan afterwards.

Ingredients:

1 red or white onion

2 garlic gloves

1 medium red pepper

1 medium yellow pepper

500g tomato passata

1/2 jar of curry paste of your choice (read label to see) Or you can make your own spice mix.

2 medium chicken breasts

100g of quinoa

tsp of coconut oil (or oil of your choice)

salt and pepper to taste

Method:

  1. Dice the onions and garlic place in a frying pan with the coconut oil until they are slightly cooked.
  2. Cut up your red and yellow peppers and add them to the pan fry for 4 minutes on a medium heat.
  3. Whilst they are cooking you cube the chicken up and fry it off in a different pan. Once done you add the chicken to the pan with the vegetables.
  4. Add the tomato passata and the curry pure of your choice
  5. let simmer on a low head for 10 minutes.
  6. Add the 100g of quinoa to the mixture and keep on a medium heat. You might have to add in some water because the quinoa will thicken the mixture. So, add a little water when needed. You can usually tell there is water needed when it is starting to stick to the bottom of the pan.

Finished:

Add the healthy curry to one bowl and enjoy your meal as a family or by yourself. If you double up on the recipe there will be more for tomorrow. As well as other days if you put some in the freezer.
