Monday Meal 15:Banana pancakes with summer fruits

These banana pancakes are one of my go to breakfasts, it has everything a great breakfasts needs to last you through the morning until lunchtime. One reason why breakfast is such an important meal for me is because I feel hungry in the morning. Whereas, if I didn’t eat anything I wouldn’t be able to perform to my best. Which won’t leave a great impression for my clients. So I make sure that I’m fully fuelled. If this sounds like you then I would make sure you have a breakfast with carbohydrates, protein and some fruit or vegetables.

It will set you up nicely for the day. Especially knowing that you have had some of your vital nutrients before lunch time. This will give you peace of mind that you’ve got some vitamins in your body already. Otherwise, if you only have a bland breakfast like cereal or toast it won’t fill you up and wont supply your body with the correct micro nutrients.

What to buy for your banana pancakes

2 medium eggs

1 medium banana

1 cup of oats

3 strawberries

7 raspberries

1 tsp Cinnamon powder

Coconut oil

Added toppings:

Peanut butter

Nuts

Seeds

How to make your banana pancakesBanana Pancake being cooked

  1. Get a bowl and mash 1 medium banana
  2. Add 2 eggs and whisk the mixture together
  3. Add the oats until it feels more like a batter.
  4. Mix in the cinnamon.
  5. Place a small tsp of coconut oil to a pan and fry your first pancake. Once the first one is done place to on a plate and finish off the second.
  6. Cut up and place the strawberries and raspberries on top of your banana pancakes.
  7. Add other toppings like nut butters or seeds if you feel like it.

For example, in some Mediterranean countries they have stewed vegetables for their first meal of the day.
